Lincolnshire is the home of England's oldest commercially traded biscuit. Grantham Gingerbread was first baked by William Eggleston in the town in 1740. Unlike most gingerbread, it uses no treacle, producing a distinctive pale biscuit known as "white gingerbread." Production had fallen out of existence entirely until local man Alastair Hawken revived the recipe in 2009. After much experimenting and focus group testing, he later discovered his recipe was identical to the original. Hawkens Gingerbread now supplies farm shops, delis, and Lincolnshire Co-op stores across the county and beyond.
